Got leftover Easter chocolate? Try these Avocado Brownies!
Not only will these brownies hit the spot when you’re craving chocolate, but they’re also full of healthy fats and fibre to help keep your blood sugar steady.
Enjoy one as a snack with a cup of herbal tea. Trust us – you’ll be glad you gave these a go!
Serves 8
Ingredients: 1 medium avocado, 2 eggs, 100g dark chocolate, 15g cacao powder, 1/4 cup almond meal, 1.5 tbsp honey, 1/2 cup raw walnuts
Method: Preheat oven to 180C/160C fan forced; melt chocolate in the microwave for 30 seconds, stir, then heat for another 30 seconds or until melted; roughly chop the walnuts; add all other ingredients, apart from the almond meal and walnuts, into a blender/food processor and blend until smooth; place the mixture into a bowl, and fold in the almond meal and chopped walnuts; place the mixture into a square baking tin (roughly 20cm x 20cm) lined with baking paper, and cook for 15-20 minutes or until cooked through (test by putting a knife or skewer into the centre); leave to cool, then cut into 8 pieces.
