Slow Cooker Comfort (or bake in the oven)

It’s the last month of winter, but there’s still time to enjoy warm, comforting meals that are easy to make and good for you. 

We’ve got a delicious recipe for you: Easy Vegetable & Chickpea Slow Cooker Curry. It’s great for a Meat-Free Monday, or any day you want a healthy, low-cost meal. 

Chickpeas are a smart choice! They’re packed with fibre and protein, have a low GI, and can help you:  

  • Stay full for longer  
  • Keep your blood sugar steady  
  • Support a healthy heart and gut 

This curry uses easy ingredients from your pantry and seasonal veggies. Just pop it in the slow cooker, and let it do the work! The best part? It makes extra servings – perfect for quick lunches or dinner the next day! 

Tip: Try serving your curry with barley or quinoa for even more fibre and longer-lasting energy.

Serves = 4

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large brown onion, chopped
  • 2 teaspoons of minced garlic
  • 1 tablespoon curry powder
  • 3 teaspoons of ground cumin
  • 2 teaspoons of ginger (fresh or ground)
  • 2 x 400g can diced tomatoes
  • 1 x 400g can chickpeas, drained and rinses
  • ½ head cauliflower, cut into florets
  • 1 medium carrot, cut into rough pieces
  • 4 cups of mixed frozen vegetables
  • 200g cottage cheese
  • 3 cups of steamed brown rice to serve

It’s this easy

  1. Heat the olive oil in a large saucepan over medium-high heat
  2. Add the onion and cook for 2 minutes or until starting to soften
  3. Add the garlic, curry powder, cumin and ginger and cook for another minute, stirring to combine
  4. Add canned tomatoes, chickpeas, ½ cup of water, and all the vegetables. Stir to combine and cook on high for 2 minutes or until the mixture has come to a boil
  5. Transfer the curry into the slow cooker and cook for 4 hours on high or 6 hours on low heat. If you don’t have a slow cooker, you could place all ingredients in an oven proof dish, cover and cook at 110°c in the oven for 6 hours
  6. Once cooked, stir in the cottage cheese before serving
  7. Serve the rice out into 4 bowls and spoon the curry over the rice

Tweaks

  • Serve with a squeeze of lemon or lime juice or fresh chopped herbs eg. coriander
